Egg Salad Lettuce Boats

12 hard boiled eggs 1/4 cup greek yogurt 1/4 cup mayo 1/2 cup diced red onion 4 tbsp dijon 1 tbsp lemon jice 1/4 tsp salt Pepper Celery greens (could sub dill or chives or both) Romaine leaves
Mix all ingredients except romaine leaves. Hit it with the immersion blender 4-5 times, until some is blended but chunks remain. Use romaine to create lettuce boats and enjoy.
Tomatillo Shredded Chicken with Beans and Rice

1.5 lbs tomatillos 1 white onion 2 poblano peppers 1 jalapeno pepper
Broil on medium for 10 minutes in Breville, then blend until smooth.
1 cup rice 1 cup water or broth.
Cook rice.
4 very small red onions 1 tbsp avocado oil 1 can black beans Cumin, cinnamon, and salt to taste.
Sauté diced onions until translucent. Add spices and drained black beans. Cook for 10 or so minutes until it tastes good. Add rice and stir if desired.

I am reading “The Hundred Languages of Children,” which is less a book and more an exhibit on the history, theory, and practice of education in Reggio Emilia, a region in Italy with a strong, locally-controlled early education program. A cornerstone of the Reggio Emilia way of education is documentation. There are several benefits to documenting the children’s work and learning throughout the day, week, semester, year. Educators can find themes, understandings, misunderstandings, and interests, and use their findings to guide learning and teaching. Children can demonstrate and reflect back on their knowledge. Parents and community members are given a clear view into the classroom, allowing them better understanding of their children and their school, increasing involvement with both their children and their school.
